- 1 pound black eyed peas
- 1 pound ham hocks
- 1 pound smoked turkey wings
- 1 pound smoked ham hocks

Directions:
To make this dish, you will need the following ingredients:
- 3 cups of rice (uncooked)
- 1 cup of black eyed peas (uncooked)
- 1/2 lb. sliced deli ham, chopped into cubes or strips
- 1 large yellow onion, diced into small pieces
- 1 green bell pepper, diced into small pieces
- 8 cloves fresh garlic, minced or pressed through a garlic press
Directions: Cook the rice according to the directions on the package. In a separate pan over medium heat, cook the ham until it starts to brown slightly. Add 1 tablespoon olive oil and cook onions until they are translucent with just a bit of browning on some edges. Stir in bell peppers and cook for another 5 minutes until they start to soften slightly but still retain their crunchy texture. If needed add more olive oil at this point so everything isn’t sticking together too much on bottom surface where there is no liquid yet from cooking meat & veggies off heat source (not yet added). Once meat has been cooked sufficiently add garlic then stir together well before adding drained black eyed peas & spices; salt & pepper should be added at this stage as well since residual water from boiling veggies would dilute flavor otherwise if added after cooking was complete

When you’re done cooking, don’t forget to add salt and pepper to taste. But be careful: It’s easy to overdo it! Add a little bit at a time, tasting as you go along. If you want more garlic or onion flavor, add more!
